Ingredients:
2kg Divine Deli Pork Trotters
2 Tomatoes chopped
2 Onions chopped
2 Cloves garlic chopped
2 Fresh chillies chopped
50 g Tomato paste
4 Tablespoons mild curry powder
2 Tablespoons Turmeric
10ml Salt
10ml Black Pepper
5ml cumin seeds
5ml cardamon ground
5ml coriander ground
5ml Fresh ginger chopped
1 curry leaf
2 bay leaves
1 liter of Beef Stock
2 Tablespoons Divine Deli Cooking fat
Method
Wash trotters and pat dry. Season with salt and pepper.
Heat Divine Deli cooking fat in a black pot, gently place the trotters in the pan and fry for 2 minutes on all sides. Remove and set aside.
In the same pot add minced garlic, onion, ginger and fry for 2 minutes until softened.
Add tomatoes, tomato paste, fresh chillies and stir through.
Add the trotters to the pot and sprinkle with the curry powder, turmeric powder and all dry spices.
Add the beef stock and cook for 60-90 minutes or until soft.
Serve with rice or porridge.
