OMBIDI / EKAKA (DRIED SPINACH)

Ingredients: 

500g Ombidi / Ekaka 

3 tablespoons of Onjove oil (Marula nut oil) 

1 Onion chopped 

2 Tomatoes chopped 

1 Garlic clove chopped 

Optional: 

Crushed chillies 

Kapana spice 

Elumelinika spice (when available) 

 

METHOD 

  1. Soak the ombidi in a bowl of cold water for 15 minutes. 

  1. Put on high heat with a small amount of water, add the spices and bring to the boil. (For a spicy option add the elumelinika paste and chillies) 

  1. Cook for 20 minutes, until soft. 

  1. Add the onion and tomato to the ombidi. Cook for 5-7 minutes.  Add more water if necessary. 

  1. Add the omagadhi fat to the dish.  

  1. Eat with Oshifima porridge drizzled with onjove oil.
