POTATO SALAD

Ingredients 

6-8 Medium size potatoes 

1 Medium onion chopped finely chopped 

1 Shallot finely chopped 

500ml Mayonnaise creamy 

10ml Mustard, mild 

10ml Sugar 

100ml milk 

Salt shaker 

Pepper shaker 

Gherkin optional for garnish or freshly chopped parsley 

 

Method 

Cook the potatoes for 30 minutes or until soft when tested with a thin skewer. Let it cool and then peel the potatoes. 

Mix the mayonnaise, mustard, sugar and milk in a bowl. You can also add the onion to the mayonnaise mixture. 

Cut the potatoes in 5mm thick slices and put a suitable bowl, sprinkle each layer with salt and pepper and then pour the mayonnaise mixture also on each layer. Repeat until done. 

Garnish the potatoes with fresh parsley or gherkins.  For variety replace the parsley with fresh dill.
